The olives are harvested at the end of autumn. First of all, the olive tree is shaken to make the olives fall, and a large net or canvas sheetS are spread under the tree. Then, the olives are collected and put into large baskets. THE OLIVES are THEN taken to an olive press. Before pressing, the olives are washed and the leaves are removed. There are two types of olive press: the preparatory press is used to extract the first oil from the olives, and the final press is used to press the olives more thoroughly. Next, virgin olive oil is made from the first pressing . To qualify as virgin olive oil, the olives HAVE to BE pressED within seventy-two hours of harvesting. Finally the oil Obtained from the final pressing is refined and blended, and then sold as blended olive oil.
